Paid $20 for $5 groceries; checker gave me $25 back.
Boy, they're serious about getting people to join the Customer Loyalty Program! Really, I didn't think about keeping it for even a second, but she's very lucky I look at the bills before I slip them in my wallet. I told her that while I appreciated the early Christmas gift, I couldn't really keep it. That was one relieved checker!

their job, not for dishonesty, but for simple mistakes... simple lapses
of focus.

At least, if it was at Walmart. Walmart cashiers can get by with a $50 deficit before action is taken.

6. Locally owned health food store. I'm sure she would have been out $10,
but that that would have been the limit of the action taken.

8. You can't make employees "make up the difference"
Huge no-no. But, they can be written up for it, and fired if it happens too many times. Most Ex (or current) retail managers can usually tell if a cashier is incompetent or stealing.

4. The golden rule
I wouldn't want any store that I patronize to cheat me out of ten bucks, so I wouldn't try to cheat them, either. You handled it nicely, hopefully it was just a momentary lapse by the checker, and if it wasn't, will be sufficient warning for her to pay a little closer attention. If it wasn't sufficient warning, she may be better suited for other work, and will no doubt have an opportunity to find out just what that is.
