. . . . ...pre-made stuffed Portobello mushrooms with feta cheese, spinach, peppers & onions (usually $5... on sale for $2 because tomorrow is the expiration date -- I wish I had bought EVERY ONE THEY OFFERED), brussels sprouts with a little Honey French w/Bacon dressing, and a small caprese salad of tomatoes and fresh mozzarella with fresh basil and balsamic vinegar in place of the olive oil. . . . MiddleFingerMom's middle is a happy fellow, indeed. . . .

pizza margherita - homemade crust with mozzarella, fresh (garden) tomatoes, garlic, basil, a little Parmesan, olive oil and a sprinkling of kosher salt
tossed green salad/homemade ranch
oh and cornflake crusted deep fried zucchini with homemade ranch dressing for dipping. I know, I know. But we are getting so sick of them, battered and deep fried was the only way anybody would touch them.

. . . . . ...on the stuffed mushrooms for the last 2 minutes under the broiler. . . And a little bowl of pumpkin ice cream with fresh raspberries. . . . . . Have you tried zucchini bread? MiddleFingerMomMom used to freeze a TON of it and that's one thing we NEVER got tired of. . . .

sorry, a half cup of shredded zucchini isn't going to put a DENT in the dozens of overgrown gourds weighing an average of 15 lbs apiece!:rofl:
did she freeze a ton of z bread or squash itself? :P

. ...and froze THOSE in aluminum foil loaf pans... zuchhini, tomatoes, spices and mozzarella cheese. . . The neighbors seriously learned to hide and not come to the front door when they'd see the MiddleFingerKids approaching their houses carrying heavy paper grocery bags -- the opposite of urchins begging... we were anxious to GIVE things away (they were fucking HEAVY!!!!!) . . . Can't the squids design and build a zucchini cannon or something? . . . One that would shoot off zucchini fireworks or something? . . . THAT might be something people would PAY to see. . . . . . . . . . . . . . . . OOOOHHHHHH!!!! AHHHHHHHHHH!!!! WHOA!!!!!!!! FUCK!!! ONE WENT DOWN THE BACK OF MY SHIRT!!!! . . .

. . . . Gonna try to post my poem tomorrow. I was able to recreate MOST of it and filled in the blanks where I couldn't remember the original words. . . . It doesn't feel QUITE ready, but then again... they NEVER did. . . . If I waited 'til it was "ready", I'd probably post it sometime in 2023 -- and the moment I put it out there would undoubtedly say, "DAMMIT, I shoulda used THIS word!!!!!" . . .

Washed down with a liter of Diet Coke. I'm going to have to do something about my diet, but it's really hard to eat right out here on the road. Sometimes I'm lucky just to get something that will fill the void.
