Also, is there a GPS app that will give me my latitude and longitude down to the arcsecond or so?`

1. There's a few compass apps that will do it
I'm not sure how accurate the altitude is, and the GPS coordinates are usually described in decimal format rather than degress/minutes/seconds, but some of these might be configurable in that regard. I'm not sure how accurate any of these are as they would be limited by the iphone's GPS capability, and I'm not sure how great that is. I don't think the iphone's GPS is WAAS capable.

2. I believe only military grade GPS units have that capability for accuracy.

Altitude you should be able to get but accuracy to the arcsecond would be beyond civilian capability.

5. I was actually mistaken - I've been researching, and arcsecond is just a second.
I had thought arcsecond meant 1/60 of the second. Apparently it's the same as "second", they just use the word so that idiots (like me) don't think they're talking about time when they're talking about angles.

So I downloaded an app called "elevation" and it gives me location to 1/100 of an arcsecond.

Of course, i don't know what the +/- is for margin of error - I'm sure it's larger than the 1/100 of an arcsecond - I'd think maybe a quarter that, perhaps offering location to +/- 25 feet.

make a commitment I doubt will be worth the cost of this to you.

On edit: I'm sorry, I see that you have already addressed this. Peace.
