I made a homemade chicken pot pie, a garden salad, and a fruit salad w/lemon dressing. The kids loved it. :9
How about you? :)

2. Yeah, we're bringing in the last of our veggie harvest right now. |
|
I have a few cherry tomatoes that still need to finish ripening, but I think everything else except for the pumpkins is done. Ate the last big tomato and cucumber with the salad tonight. Man, our cukes and 'matoes were great this year.

5. How do you cook your quinoa. |
|
I bought a bunch of exotic grains from the organic market trying to eat healthier, then realized I don't know how to prep any of this stuff.
Quinoa Israeli Couscous Buckwheat
I could pull out my Veganomicon but I'm lazy. Now I'm lazy and starving because I didn't buy easy to prep food.

6. We use quinoa just like rice. |
|
You can pretty much interchange the two--the flavor reminds me of brown rice with a texture like couscous. But if your quinoa isn't already rinsed, make sure you do that. We got unprocessed quinoa once and didn't realize we were supposed to soak it and rinse it, and it came out really bitter and soap-tasting. Yuck. If the granules are light-colored, though, you're fine--it's already rinsed. Unprocessed quinoa is dark brown.
It's particularly good when added to vegetable soup. :)

7. Grilled chicken tacos, and for dessert caramelized banana's and cinnamon over vanilla ice cream.. |
|
We have been BBQ'ing chicken with a simple lemon juice marinade as a basic ingredient. Last night we were watching a recorded episode of Top Chef Just Desserts. Mid show we paused, and I tried to caramelized bananas with regular sugar and cinnamon. I did not get them to glaze, but damn they were good over French Vanilla ice cream.
We now have a recipe, pecans, and Alley on it.. MMmmmm Dessert!!

9. a big stacked enchilada made with corn tortillas... |
|
...and filled with black beans, grated zucchini, olives, salsa verde, chopped tomatoes, sliced scallions and a pound of grated cheese. Baked until cheese is bubbly inside.
Side dishes: buttered corn, and a salad made with radishes, thinly sliced red cabbage, baby greens, garden tomatoes, and a buttermilk dressing.
Too many carbs for me, so I had to eat small portion.

10. Probably "make your own" - wife's testing in karate tonight. |
|
Actually, it is the second half of the test. The first half was Wednesday night. She's a third degree, but there are seven or so tests between third and fourth (which is "master" level). I think the only thing she's worried about is the power punch through an adult board where she has to hold it herself. She's done it, but you don't just fuck up when you fail at it - you FUCK THE HELL UP! It is a good technique for breaking a knuckle or your wrist.

I put them in a pan with beef or chicken broth, onions, garlic, peppers, and spices. However, in the summer I cook them on the stove when it's too hot turn the oven on!
