I had a Japanese girlfriend years ago who was SHOCKED by the concept of "spaghetti & butter with Parmesan."
It's one of my top-10 "comfort foods"...with garlic maybe 1/3 of the time.

As for pasta, if it is chewy and stick together, you fucked up cooking it - simple as that. You shouldn't need a knife to eat ANY kind of pasta - including lasagne. If God wanted pasta to be chewy and sticky he would have made it out of something chewy and sticky.
On Edit: (The chewing and chomping CAN be fun once in a while!)

Proper al dente pasta is wonderful. If it feels like it hasn't been cooked long enough ,then it's not proper al dente. It's supposed to be firm to the teeth, not crunchy.

Personally, I can never decide between chunky or smooth. I'm no a huge PB fan. I mostly use it to flavor Asian-type dishes.
As for pasta, I learned to appreciate it cooked al dente thirty years ago when I worked in an Italian restaurant. Now, I can't stand it all mushy and soft.
Pro Tip: If your cooked pasta sticks together, toss it with a bit of milk.

Usually I toss a slurp of olive oil into the pot straight after I put the pasta into the water, and stir it through. Mainly because that's what my Maltese grandma did, I presume it was to stop the pasta sticking together.

I've done that. You're right, it seems to help keep it from sticking together.
Believe it or not, I've gotten quite skilled at cooking pasta in the microwave. I fill my dish with just enough water to cover the pasta, pop it in the micro and cooked for 12 minutes. Most of the time, it's cooked just right with almost no leftover liquid.
As for what I add after the fact, that mostly depends on what I have on hand and what I can afford. Lately, I've been adding a couple of fistfuls of dried, roasted soy beans to my pasta before I cook it. Then I grill up some veggies and toss all of it with some butter, garlic, herbs and parmesan.
Just the same, the next time you got sticky pasta or you just want to refresh cold pasta, try the milk thing.
EDIT ADD: That's 12 minutes microwave cooking time for a 7oz. bag of pasta or for half a bag of 16 oz pasta.
