from the care taken, wonderfully good. The toasting and frying and blending of all the chiles must make for a great, great flavor! Where do you get all of them? I made mole one New Years and it was involved, but nowhere near that involved! :wow: It would be hard enough here to get all the dried chiles, I suspect.
Best of luck to you - are you cross-posting in the C and B forum (as well as how it all went?)

Lots of Mexicans where I live so the stores are pretty well stocked - except for those Oaxacitlan (sp?) chiles, I substituted.
I'm just finished with the purees. House smells great but I need a rest after being on the go for 4.5 hrs getting the ingredients and cooking. I need a beer.
No cross post, since the Lounge is where it's at.

I don't have them anyway. Maybe a bitter, earthy note? Moles are weird, there is almost always a strange one in there.
