that there is only one thing that I know, which is that the set of things known by me is a set with exactly one element.
You can see why Socrates went with "I know nothing", paradoxically claiming to know one thing, that one thing being that there is no such thing. It might be paradoxical, but it's a brief, memorable slogan.
