Poll question: Spaghetti Squash. Rockin' entree or cop-out for people who are afraid to deal with REAL spaghetti?

Herbed Spaghetti Squash

Recipe courtesy Emeril Lagasse

Ingredients

* 1 small spaghetti squash, about 2 1/4 pounds
* 2 1/2 tablespoons butter
* 2 1/2 tablespoons finely chopped mixed soft herbs, such as basil, chives, chervil, parsley and sage
* 1/2 teaspoon salt
* 1/8 teaspoon freshly ground black pepper

Directions

Preheat the oven to 375 degrees F.

Using a sharp knife, cut the squash in half lengthwise and place, cut side down, in a baking dish. Add enough water to come 1/2-inch up the sides of the baking dish and cover with aluminum foil. Bake for 45 minutes, until the squash is easily pierced with a paring knife. Turn squash over and cover with foil again and continue to cook another 15 minutes, until the squash is very tender. Remove from the oven, uncover, and allow to cool slightly. Using a spoon, remove the seeds and discard. Using a fork, gently pull the strands of squash away from the peel and place the squash strands into a mixing bowl.

Heat a skillet. Add the butter, spaghetti squash, herbs, salt and pepper and toss thoroughly but gently to heat and combine. Serve immediately or cover and keep warm until ready to serve.

1. It's both.
That recipe sounds yummy! That's very close to the way I make it. I use olive oil, instead of butter, and fresh basil. But, I also add garlic (sauteed fresh or powder) and stinky cheese like feta or peccorino, and sometimes chickpeas. Spaghetti squash a good low-carb/low-cal sub for pasta, but it's good in its own right, and a nice change of pace from pasta for those not on any sort of diet. I'll have to try it your way next time I have a squash on hand.

3. Spaghetti Squash is a way to sneak a veggie into your family.
While I don't think it is an exact match for honest to gosh pasta, it is a most acceptable way to sneak yet another veggie into your family without a huge amount of drama. Think of it as being kinda like hiding beets in brownies--you are getting a vegetable matter into everybody's mouth and most of the time they will not be terribly whiny about eating it.

A pretty good plan, IMO.

4. I always plant some every year.
I enjoy them. I usually sautee the cooked squash with some onion, herbs, then add some marinara and parmesan just before serving.

6. I really like it. My husband can't stand it.
Lots of things aren't spaghetti but I like them anyway.
