1. I've always seen it served with a cheese sauce.
But, I gotta say that the lemon and butter flavor of a hollandaise sound pretty good to me...

4. Hollandaise is too mild to overcome the heinous flavor of cauliflower.
I'd go with a sharp cheddar sauce. And then just eat the sauce, not the cauliflower.

6. Bland as it is, any reasonable sauce will do. Try
a 50/50 mix of Miracle Whip and your favorite mustard.

7. Sure, if you throw some curry powder into it.
It's great with butter-toasted bread crumbs, too (Polonaise style). Of course, if you roast it (with or without some garlic), it doesn't need any sauce.

13. I think a white cheese sauce is what we had growing up. Lately I have been using store bought
alfredo sauce which works great.
