Also, hummus, guacamole, and I, too, am a fan of caprese salads. Although, if it's big enough I will have the latter as a whole meal. Even better if it's melted on a pizza crust without the dressing (Margherita pizza). ;-)

or this thing I made once from a French cookbook where you cook up Mirepoix, put it in puff pastry and put a hunk of foie gras, wrap the whole thing up and bake it. Amazballs.
