The ones here in the US use white vinegar and make my mouth pucker.
The UK ones use malt vinegar and are easier to handle.

The reason your mouth puckers with S&Vs is, most S&Vs are made with a chemical called sodium diacetate. Flip around a bag of just about any S&V and you'll find it. It's basically powdered vinegar, and it can be used in the same chip-flavoring machine they make all the other flavored chips--barbecue, ranch, whatever. The problem is, it's way too sour.
For the true S&V experience you need S&V chips made with real vinegar, which takes a different machine. Cape Cod has one; I don't know if anyone else in the US does. But their chips have that special taste we love--Smiths Crisps salt and vinegar potato chips are one of the artifacts of my misspent youth--without the pucker.
