Hubby likes having rice as a side dish and even though I have turned him on to a wide variety of brown rices, it is still a carbohydrate rich food.
I found a recipe on Allrecipes.com that involves chopping onion finely, sautee with a little oil, maybe some garlic. Fine dice yellow squash and zuccini, sautee that a little. Stir in the rice, then add water or stock, cook until the rice is done.
The amounts are flexible - to one cup of raw brown rice, I usually use one small onion, one or two cloves of garlic, one each of medium zuccini and yellow squash, and two cups of water or stock. Last time I made it, I also diced a carrot and sauteed it longer so it would be soft to match the cooked rice and squashes.
Aside from adding more veggies to the meal, I find that the texture and flavor of the squash means I don't add butter to the rice like I am prone to do. And it makes a very pretty presentation with all the colors.

I don't cook with butter, after my heart attack last year, my diet is largely vegan now, and I'm loving it. I've been working on expanding my veggie entree dishes repertoire.
I also did grilled veggies last week, veg kabobs with many different things including zucchini and of course, roast corn on the cob.
