My husband is a fan of kale with his pork roast. We've also done sauerkraut with some success. And there's always the classic bottle-of-BBQ-sauce method.

Rub olive oil over the tenderloin, then sprinkle it with cracked black pepper and Cavender's all purpose Greek Seasoning. Yummy.

Use garlic on every single meat you cook. Even hamburgers. Use it in moderation, because it will overpower everything, if you let it.

|
pork needs to be salted just right, use a little bit more salt. Instead of more salt, I stuff non-pit olives in holes I make with a knife. Cooked pork doesn't absorb salt well after cooked. Use dried oregano, crush it in your hand, fresh garlic, paprika and olive oil for moisture. I serve fresh-garlic mash potatoes, jalapen(yo) coleslaw, fresh spinach with avocado, olive oil, balsamic vinegar, fresh Parmesan cheese.
