2. Any sauerkraut is better than canned sauerkraut.
Fresh, crisp, made in Germany, is the best kind... :9

3. My grandmother had handmade it growing up and explained the recipe to me once.
Aside from all the work hand-slicing the cabbage, it didn't sound too hard: get a barrel, alternately layer cabbage and coarse salt, put a wood disk on top, weigh it down with big stones to press until done weeks later

She was really a great cook -- but her recipe summaries were somewhat lacking in useful precision: "Add this until it looks right, add some of that until it feels right when you stir it" &c&c

And like many good cooks she tended to omit critical ingredients when passing her recipes on:

"You forgot to add such-and-such!"
But you never told me I needed such-and-such!
"Well, everybody knows this recipe requires such-and-such!"
Hey, I didn't know! That's why I asked for the recipe!
"Anyway, you should have put in such-and-such! No wonder it doesn't taste right"

So I've never had the courage to try her simple sauerkraut recipe, because there's sure to be some critical element missing, like maybe: "Oh! You forgot to throw in a few handfuls of some good uncooked sauerkraut from last year's batch and several cups of sugar. I thought everybody knew that!"

4. When I would ask my gramma how much of an ingredient
to put in a recipe, she would often say "some," or "a handful."

I used to help her make sauerkraut. I wish I knew how to make her sugar cookies. No one ever made better sugar cookies. That recipe died with her, and I am sure it was such a simple thing, like sauerkraut.

11. what most people don't realize about sauerkraut is that
canned, or otherwise you don't eat it right out of the container. You have to drain and rinse off the brine. Ideally you then simmer it for 30 minutes or so. When prepared properly sauerkrfaut is wonderful.. A linguistic note: Sauer is German does not mean the same thing as sour in English. It means marinated or pickled. Sauerkraut can be sweet as well as sour.

7. It's canned, not bottled, and the alcohol content is high enough that the beer doesn't freeze
at my freezer temp, so -- keepa coupla cans in da freeza n ya has icy-cold brew on demand

9. Well, I'd pick an intelligent funny good-hearted dame over a beer and a reuben any day,
but a day with a beer and a reuben is a pretty good day

10. my grandfather always claimed the Reuben sandwich was named after him
I never believed him since his name was Andy. Actually, his given name was Reuben but I still didn't believe him.
