That garlic sauce you get with a swarma. Is it a mixture of lard and garlic? Does anyone know? |

1. Here's the recipe from my favorite Mid East restaurant. Enjoy. |
|
Garlic Sauce:
1 C Mayonnaise 1/3 C Yogurt 1/4 C Fine chopped garlic* 2 Tbsp Lemon Juice 2 Tsp Pepper 1 Tsp Sea Salt
Combine ingredients and mix well.
*You may want to reduce the amount of garlic, but I like a lot.

Unless you are talking about the Mayo Clinic.
Most traditional recipes are yogurt only, yet Americans love fat!

It should be a base of oil, yogurt, or tahini depending on which culture's version is used.

2. Likewise, what the heck is the green stuff that comes with Peruvian Pollo de la Braza? |
|

I don't eat the chicken, but the sauce is delicious and I put it on everything...but the Peruvian place is charging me like $4/8oz. for it.
Edit: I thought of it because the Yellow mayo sauce that they serve was the first thing that came to mind when I thought of the garlicky sauce served at the Shawarma Shack.
I'm a sucker for sauces, but not meat. The garlic sauce makes great salad dressing too.
