OK...I learned a number of things doing ribs this weekend. I tried a mix of Matcom's and NSMA's methods, grilling the ribs but putting a pan of water on the bottom rack below the ribs. This worked, but I guess my grill doesn't go that low because the ribs did come out pretty dry. The chips in the smoker caught fire, and I attribute this to that development.

Also, when using a rub, say Salt Lick's rub, keep in mind they call the place Salt Lick for a reason - that rub was 33 1/3% salt! As a result I ended up using way too much rub and making them into salted ribs.

I'll do another go at it, remembering to always keep wetting the smoker box, and checking on it more often (thus lowering the heat.)
