1. I'm no expert either...
but I would probably elevate the mum plant (put a upside down flower pot or something under it to raise it up) and then group pumpkins around. Odd numbers are always good for grouping. You don't have to put all seven pumpkins in one spot, but I would probably group three or five of them together.
Just play around with it...it'll look great!

3. For examples, try doing a Google Image Search (GIS) for "grouping pumpkins".

.
.
Google will try to make it about "growing" -- insist on "grouping".

.
Maybe some inspiration. Here's an interesting piece where someone
added some really unusual squash and a PINEAPPLE!!!

.
Floral arrangement fascinates me (in particular Japanese zen-like
simple arrangements)-- yet I have not one itty-bitty knack for it.

It sounds like you need some "fillers" like small gourds and maybe some Indian corn.

8. Use a lot of containers of varied height, covering them after you've determined your set-up.

You can cut lengths of raffia to hide the tablecloth.

Start with your three large orange pumpkins, arranging them in this order:

...o
.....o
..o

Then set the rest of them in between.

Use small branches & twigs as fillers.

For bales of hay for a school play, I stuffed large paper grocery bags with bunched-up newspaper, maintaining a rectangle shape, then covered the outside with hot-glued bits of raffia.

I'm more fascinated with the small gourds. I carve faces out of them, then string them with fishing line to hang outside the door.

10. Depends. What kind of faces are you going to carve into them?
