For JI7. My vegetarian chili recipe:
Edited on Tue Oct-04-11 01:52 PM by ohiosmith
All veggies are thick chopped.
Sauté in olive oil two crushed garlic sections and two large onions until translucent.
Add one red, green, and yellow bell pepper. Sauté until al dente.
Add one pound of carrots.
Add six ounces of tomato paste. Mix thoroughly.
Add one bottle of a stout style beer. Bring to simmer. Stir.
Add two 14 ounce cans stewed tomatoes. Bring to simmer. Stir.
Add two bay leaves.
Add 1/8 cup Demerara sugar. Stir.
Add one table spoon chili powder. Stir.
Add one table spoon Spanish paprika. Stir.
Add 1/4 teaspoon cayenne. Stir.
Add fresh ground black pepper and salt to taste. Stir.
Simmer on low until carrots are al dente. About an hour. Stirring periodically.
Remove from heat and add one 15 ounce can each of drained and rinsed red, pink, and white kidney beans. Stir.
When cooled place in fridge for at least 12 hours.
Reheat slowly stirring periodically. Instead of reheating on the range top, I transfer the mixture to a slow cooker and heat on low for a couple of hours.
Enjoy.

1. I forgot to include the jalapenos. Add two sliced after the beer.

My chili is usually what I can throw together with no though at all, like 5 ingredients, but I will try this soon, TY!

5. Since I am a vegetarian, it looks to be delicious,
but I have one question: What is Demerara sugar?

8. It's actually London Demerara. I get my buds in Canada to bring it to me whenever they visit. If
needed I make my own. I use two parts dark brown sugar mixed with one part molasses. :hi:

12. OK. that sort of answers the question.
I will pick up some brown sugar and molasses before making that recipe because it sounds delicious.

13. True Demerara is simply an unrefined sugar named after the colony in Guyana where it was originally
produced. London Demerara is much richer and not as sweet due to the addition of molasses.

6. Hey THANKS! I just made veggie chili for the first time today.
Closer to the "cans of beans and veggies and McCormick's but surprisingly delicious. I look forward to trying yours.
