The other day I found myself in a nearly impossible situation: After slow-cooking and serving a whole skin-on pork shoulder for a dinner party, complete with porky, juicy, fall-apart tender meat and a huge piece of crisp, crackling skin, I cleared the table and found this:



Step 1: Deconstruct Big Mac, Toss Middle Bun, Add Crispy Pig Skin



Of course, if you want, you can make the entire thing 100 percent from scratch using my Better Big Mac recipe, but on this particular day, I was in no shape to do so.

I reheated my pig skin in the toaster oven for this until it was nice, hot, and crisp.
Step 2: Replace Lettuce, Pickles, and Sauce on Top of Pig Skin



Step 3: Replace Top Patty and Top Bun

Except this wolf don't dine on swine.

Most preservatives used in many pork products make my migraines worse, so Porky is safe from me.

Now, if Porky is more like fresh wild boar, then I'll be right over

2. Nitrates?
I don't eat meat anyway, but if I want wine, it has to be organic, no added sulfites. I keep tylenol suppositories in the house, though now that I watch my diet, I haven't had a migraine in years.

3. To be honest, I'm not sure what it is.
We (me and my family) noticed that my migraines got worse when I ate any prepackaged pork products. Freshly butchered stuff is typically fine and wild stuff is even better, but it is just easier to go without pork. Besides, when eating out, it is not likely to be sure that a pork dish is really fresh with no preservatives.

I never really noticed much difference when eating other prepackaged meats (beef/chicken/etc.)vs. fresh. A long time ago I did a bunch of testing with my diet and found a whole bunch of stuff that I know to avoid besides the typical migraine inducers like chocolate and alcohol.

5. If it's fresh butchered - no preservatives - then I can do it.
It's those nasty chemicals they use to make the pork last on store shelves that gets me.

6. I have sometimes wondered why the Big Mac is sacrosanct
Just imagine how much better the Big Mac would be with bacon on it, or swiss on one of the patties.
