2. Toward the plate. That was a requirement in college
Along with beverage glass at the 12 o'clock position, eyes on the decal on the plate (also at the 12 o'clock position), etc., etc.

Funny how I don't miss those days!

3. Toward.
I was never formally taught that, but our county fair every year has a 'table design' competition (not sure what exactly to call it) in the arts and crafts area, and I've learned a lot from reading the evaluations that get posted. It's really quite a cool thing to see...
