10. Well, what I did was pretty rudimentary. I grabbed ten lbs of 90% lean ground beef |

and divided it into about 6 parts
Then into each of the six parts I worked a bunch of one single spice: this part, only basil; that part, only oregano; another part, only minced garlic; another part, only minced onion; and so on. That's so they won't all taste the same
Then I handrolled each part into thumbjoint-sized (3/4 inch) meatballs and layered them loosely into a big pressure cooker, so steam could circulate freely. Actually had to pressure cook the first three parts; take the meatballs out; then pressure cook the next three parts
Pull the meatballs out of the pressure cooker, drain, and refrigerate. They're holding their shape well
I got about a half gallon of drainage that I refrigerated and then later removed the hard grease from the top. The rest jellied like aspic: it's gonna get diced onion, bell-pepper, and leaf celery simmered in it; then I'll add a few gallons of canned crushed tomato, bayleaf and maybe some sage or time. The meatballs are gonna get slightly broken (halves or thirds or quarters) and added to the sauce, to get a slightly chunky meat sauce with meat bits that don't have an entirely uniform flavor
Get's served Sunday

I have a get together for friends, usually in the first or second weekend of December, and make a huge amount of spaghetti and meatballs. I but a good amount of parmesan cheese in mine.
Much more time consuming than a meat sauce, but worth the effort when you see peoples eyes roll back in their head on that first bite.
