Who likes sweet potatoes at Thanksgiving? |
|
I mix them up with pineapple, mandarin oranges, butter, brown sugar, vanilla, and bake them, then broil the marshmallows on top.
It's a veggie! It's a dessert! It's got lots of Vitamin A!

I hated that shit as a kid (and won't make it like that now). I also hated acorn squash because it was always baked with a shitload of butter and brown sugar. I love it now because I don't do that to it. I can see adding fruit, but fuck the marshmallows. :puke:

For me the best way to eat sweet potatoes is baked with butter and salt added at the table.
Someday I do want to try oven baked sweet potato fries, though. They sound good.
Now it's OK to add brown sugar if you're making sweet potato pie, but that's a dessert, not a side dish!

I've never tried making sweet potatoes with oranges, but I'm going to this year. Thanks for the idea!
Marshmallows on top - YUM! I have to make a separate sweet potato casserole for the vegans, with no marshmallows and no real butter, but there are vegan substitutes for these two ingredients.

I eat sweet potatoes at least 3 x week and have cravings for them if I go too long without them. Scrumptious.

I like to bake sweet potatoes and apricot halves with some butter and brown sugar. I also like to to mash sweet potatoes, add shredded coconut, throw some mini-marshmallows on top, and broil for a minute or so. Damn, that's good!
I never thought to use mandarin oranges, maybe I'll try that next time. :9

Ingredients •4 large sweet potatoes (approx. 2 1/2 to 3 lbs.)•1/2 cup brown sugar •1/2 cup sugar •1 teaspoon cinnamon •3/4 teaspoon nutmeg •2 eggs - beaten•1 cup coarsely chopped pecans •1/4 cup flour •1/3 cup brown sugar •3 tablespoons butter - melted
Directions Preheat the oven to 350°F. Butter the bottom and sides of the casserole dish. Set a side. Peel and cut up the sweet potatoes into large chunks. Place in a saucepan with salted water. Bring the water to a boil over medium high heat, cover, and then turn down to medium low heat. Boil for 20 to 25 minutes or just until tender when poked with a fork. Drain the water off the sweet potatoes and then place them in large bowl. Mash the potatoes with a large spoon or a potato masher. Add the white sugar, 1/2 cup brown sugar, cinnamon, nutmeg, and beaten eggs. Stir until mixed evenly. Pour the sweet potatoes into the buttered casserole dish. Mix the pecans, flour, 1/3 cup of brown sugar, and melted butter together in a separate bowl. Sprinkle on top of the sweet potatoes. Place the sweet potatoes in the preheated oven. Bake for 30 to 40 minutes.

Only, I like some of the potatoes left in small chunks. There was this dive restaurant near where I used to work that made the best sweet potato souffle/casserole. They used a ton of butter in it. It was one of those places that had the best food, but was the dumpiest place on the planet. It was real hole in the wall. None of the silverware matched. The cups and plates were all mismatched, too. Hell, so were the tables and chairs. The "booth" seats were the old-fashioned vinyl kind, and they had big giant holes in them. There was a shrine to Richard Petty, which was next to what was left to the shrine to Elvis. But, the food was good, and they passed all the health inspections, which surprised us. They were shut down several years ago, not because of health department issues, but because the owner didn't pay her taxes. I really miss that place. Especially the sweet potato souffle and the broccoli cheese casserole.

They are nutritionally superior to regular potatoes. They are great in many different dishes, cooked in many different ways.
An easy way: sweet potatoes mashed in olive oil. Healthy and very delicious.

Yams and sweet potatoes are full flavored. They never need salt IMO. Maybe a light grinding of white pepper. But not really.
