1979 soup recipe that has gotten me through a lot of "no money weeks" |

I clipped this recipe out of the paper as a teenager because I loved the restaurant it was served at (the Olde World in Los Angeles) and I was dating a boy from a vegetarian family and trying to impress them. I did impress him!
Little did I know it would become my "go to" staple for decades to come whenever I had to stretch next to nothing out til pay day! My husband still asks for it every time the weather gets cold, even when we do have money! Easy, healthy, yummy and cheap!
OLD WORLD SPRING VEGETABLE SOUP
Bring to a boil: 5 cups water, 3 cups veggie broth, 1-1/2 cup rinsed split peas, 1 cup brown rice, 3 chopped carrots, 2 ribs celery chopped, 1 chopped onion, 3 cloves crushed garlic, 1 bay leaf, 1/2 each dried thyme, basil, and oregano. Simmer on low covered for 50 minutes, stir occassionally. Then add 1 28 oz drained chopped tomatoes and 1/2 cup fresh chopped parsley, salt, pepper, and hot sauce to taste. Take out the bay leaf. Voila!

Boo.
Thanks for posting this; I'm saving it for later this week. Unexpected bills so funds are tight, and that just sounds gooood when the local temp. with wind chill is -35, like today.

Tasty and filling all by itself and most of the ingredients you can get at the dollar store -- can't beat that!
-35 OMG!! My hub requested that now that it's "cold" at night - 60 degrees! How thin-blooded we are in L.A.

. . . ... and a pound bag of my grocery store's generic "soup vegetables" (tiny-dice potatoes and green beens and corn and baby limas and okra for about a buck). I'll sometimes add rice and spices and MAYBE tomatoes or a little tomato paste. If I have any leftover chicken or a spicy andouille sausage it'll get diced up and added -- it doesn't require much meat at all. . For about $2, that's two days worth of REALLY tasty "no-money-week" survival food. . . .

Sometimes I feel I make so much out of leftovers, that I'm never starting from zero! I just really HATE HATE HATE throwing stuff away.
