Post a knock your socks off, not well known recipe guaranteed to make Thanksgiving special
I'm not talking green bean casserole (although I like it), I mean something that most don't know of - appetizer, main course, dessert, doesn't matter - but that is long remembered even after the leftovers are history. Here's one that is a big hit:



Honey-roasted vegetables recipe including parsnips, carrots and rutabegas

This dish is rustic autumn beauty at its best, and it infuses the kitchen with a savory, earthy-sweet scent.

Ingredients

• 2 large parsnips, peeled
• 5 large carrots, peeled
• 2 rutabagas, peeled and sliced into wedges

Honey Vinaigrette

• 2 tablespoons oil
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 2 tablespoons fresh sage, chopped
• 8 tablespoons honey, warmed

Honey Vinaigrette

K cup olive oil
N cup balsamic vinegar (or less, to taste)
N teaspoon salt
N teaspoon pepper
2 tablespoons honey, warmed

Preparation

Preheat oven to 400°F. Whisk oil, salt, pepper and sage together in a large bowl; add vegetables and toss gently. Spread vegetables in a single layer on two rimmed baking sheets coated with nonstick cooking spray. Roast in the oven for about 40 minutes or until not quite tender, turning occasionally. Brush vegetables with honey and continue roasting until glazed, slightly charred and tender, about 10 minutes more. Remove from oven.

While vegetables are cooling, whisk vinaigrette ingredients together. Place veggies in a serving dish and drizzle with a few spoonfuls of the vinaigrette. Serve the vegetables with vinaigrette on the side.

2. Spinach Casserole with Three Cheeses (call it GREEN Casserole if you have picky kids).

Oiled 9x13 glass baking dish (it's so beautiful when done, I always use glass)

6 eggs
1 lb cottage cheese
1 pkg cream cheese (8 oz?) - softened & diced
6 oz Swiss cheese -- diced
10 oz pkg frozen chopped spinach, thawed and 'pressed' drained
.
The cheeses can all be lowfat -- I've never noticed any difference in taste.
.
1 Simply mix eggs through spinach together in a large bowl (it will LOOK terrible)
.
2. Pour into baking dish and bake uncovered 350* for 40-45 mins (it will be a LOVELY golden brown & green color).
.
3. Cut into squares and serve (hearty enough for a vegetarian entree).
.
I take this to all pot luck dinners and HOPE for leftovers to take home. Fat chance. Never. EVER.

3. OK - but when do you add the cheeses?
do you mix it all in the same time as the eggs and spinach?

Seems like a heckuva lot of cheese for 10 oz spinach ... :shrug:

Otherwise, sounds really good. I love spinach!

I guess maybe in this recipe, the spinach is a vehicle for the cheeses instead of vice versa.

But the amounts on the Honey Vinaigrette got messed up - how much is a K cup?

I love roasted root vegetables - last week we had roasted butternut squash with herbs, very similar to your dish, but plainer.

It's a German thing. Supposedly it helps with the digestion of everything else.

Ingredients:

1 can sauerkraut

28. Stuff your Turkey with mashed potatoes
I learned this from a chef years ago and have been wowing guests ever since.

Make your mashed potatoes the way you always do only with about half of the liquid (milk, broth etc.) You want them stiff. Stuff your turkey with them and roast as usual.

What you have in the end is the most divine potatoes that taste like they are infused with turkey gravy.

Make a pan of stuffing on the side for the purists.

Don't be afraid. Do it. Thank me later.
