If Palin drops out AFTER the convention, how would McCain's new running mate be nominated? |

As a procedural matter. Say Palin drops out after her acceptance speech. Would the RNC delegates have to reconvene to approve another McCain VP selection? If so, I have a hard time seeing such a delegation approving Joe Lieberman.
