By logs I think you mean the polling signature books that ppl sign when they vote a ballot? Blackwell ordered those closed to viewers. Even observers and coordinators for the Cobb recount weren't allowed to view them and check against actual ballots on recount day in most counties. I think that a very small percentage of counties were allowed to look over during recount day, but only for the portions that related to the precincts being recounted, and even then they weren't allowed sufficient time to cross-check. Many counties weren't allowed access to the pollbooks at all.

This was in Athens Co. The BoE was very open and cooperative, a pleasure to deal with, really. They had decided which precincts to count in advance of the recount start, but when shown state statute, agreed to decide by random process (paper scraps in a coffee can) to determine which precincts to hand count. We were given access to pollbools & signature books. They even made photocopies of whatever we asked for. So I don't see that this denial of access was truly state-wide practice. More reason to be suspicious where they deny access.

I have a consumer mini-DV Camera that shoots good pictures and fair sound off the camera mic.

What would be the documentation aspect of this? Would we be shooting interactions between people. Or documenting records? I'd need to get tape for the camera.
