The kale will also do, if you toast it in a slow oven to dry it out completely and use the crumbles on that fast food salad with no dressing.
Potatoes are a great vegetable if you eat them baked and don't load them down with fat. Oh, and be sure to eat that layer next to the skin where all the vitamins are.
Unfortunately, people are also buying the hype about drinking their daily vegetables in a fruit flavored juice. While they might be getting the vitamins and minerals, they're completely missing the fiber and other good stuff.
However, your link failed to enlighten me as it led to an interview with a chef.

I always thought it's funny that the healthiest thing on the salad bar is the garnish around the salad bar items. (kale)

And how much trouble is it to pack some cherry tomatoes and cauliflower bits into a zip lock baggie? You can even buy the damned veggies pre-bagged, ready to go at the grocery store.

When I've been working hard and go out for some fast food on my lunch break, I tend to just get the first combo meal that looks appetizing. I almost always forget you can substitute sides now, and just stick with the default (which is usually fries). I'm going to try and give up fast food entirely though. Getting too fat :-P

These big brains of ours need lots of energy. The most calorie-packed foods are sweet and/or fatty, so evolution led us to CRAVE these foods and prefer them over other alternatives. We are basically fighting a several-million-year-old genetic trait when we force ourselves to eat healthy.
