New Evidence That Vinegar May Be Natural Fat-fighter
So maybe there is something to the vinegar and maple syrup diet in Hollywood.

ScienceDaily (July 7, 2009) — Researchers in Japan are reporting new evidence that the ordinary vinegar — a staple in oil-and-vinegar salad dressings, pickles, and other foods — may live up to its age-old reputation in folk medicine as a health promoter. They are reporting new evidence that vinegar can help prevent accumulation of body fat and weight gain.

Tomoo Kondo and colleagues note in the new study that vinegar has also been used as a folk medicine since ancient times. People have used it for a range of ills. Modern scientific research suggests that acetic acid, the main component of vinegar, may help control blood pressure, blood sugar levels, and fat accumulation.
Their new study showed that laboratory mice fed a high-fat diet and given acetic acid developed significantly less body fat (up to 10 percent less) than other mice.

Importantly, the new research adds evidence to the belief that acetic acid fights fat by turning on genes for fatty acid oxidation enzymes. The genes churn out proteins involved in breaking down fats, thus suppressing body fat accumulation in the body.

2. Since January, I've been eating salads with just Balsamic vinegar ...
Got accustomed to it quite quickly and enjoy my salads that way now (not that I don't have the occasional ranch, italian or blue cheese.)

I have lost weight, and I sure this is one factor, including other dietary changes and increased cardio training.

have been used for a very long time as a drink to help health and weight loss. It actually tastes pretty good once you get use to, or adjust it to, taste. :)

It's good to see some research to back up the vinegar is good for you claims since we use both cider and white vinegar here for a variety of things.

5. The raft of living culture in unfiltered/unpasturized vinegar.
In the olden days, a newly married couple was given a keg of vinegar when married and they'd simply add fresh apple cider to the keg as it became depleted. A never-ending resource.

6. Actually, I heard the floating raft of glop is just carbohydrates, and that the
"mother" is the reddish-brown stuff that settles to the bottom. Either way, it's easy to inoculate some cider (or wine) and make a new batch. Two Buck Chuck cabernet makes a fabulous red wine vinegar, BTW.

8. Learn & live!
There was me thinking that the "mother" of "apple cider vinegar"
was probably going to be "apple cider" ...

Thanks (and to Kestrel for the other info too)
