1. Be prepared to eat lots of cheese and bread
France is land of meat.

Here is one good veggie option:
R'Aliment, 57 Rue Charlot in the 3rd arrondissement (the Marais).

You may also be able to find vegetarian at Vietnamese restaurants. There's a lot of Asian food down in the 13th arrondissement.

Where are you staying in Paris? I know the city very well...

4. Hey Kathy
(nice name change by the way!! :-) )

We are staying in the 12th arrondissement near the Bastille monument.

I've also heard there are some parts of town that have excellent middle eastern food which has tons of veggie options.

7. The Left bank
loads of Middle Eastern, Indian etc. in the back streets there. Most are open until quite late (2am at least). Falafel and other "street foods" can be found there during the day; unfortunately, there's also a lot of lamb.

3. Yes, had a great time. Some advice:
Learn "can I get this, vegan/vegetarian (you didn't specify which)" in French (I'm soooo rusty). While you'll have a tough time finding menu-ready veg* food, BUT, most chefs in France will be thrilled to make something new and challenging, off-menu, to flex their creative muscles. Don't be surprised if he/she comes out to see how you like it.

8. Yes, was there many years ago.
I can say that Paris has the best food in the world, at least in my opinion.
