Am trying to help out a wonderful local group here who feeds the homeless 2 times a week. They request only vegetarian and Vegan food. Any non-pasta (I notice they get a lot of pasta dishes), affordable, recipes that I can multiply to feed about 75 people? I checked out other online sources, but would rather get recommended recipes.

like minestrone and pasta e fagioli are great. They're hearty and filling, supply loads of nutrients, are dirt cheap, and can be made vegan using a combination of Vegex (hydrolized yeast) and vegetable stock (available as salty cubes or unsalty paste) in place of the beef and/or chicken stock. Both soups contain a little pasta and beans to complete the protein and can be finished with tofu Parmesean. Add some donated or day old bread, and you've got a full meal that will stick with them.
Recipes are all over the net, so I won't list one here. Just make sure you use plenty of garlic. The secret to soups is using about 3 times as much veggies as you think you'll need.

2. My favorite expandable salad: |
|
2 cans whole black beans 2 cans corn (not creamed) 1 red pepper, chopped (yellow is fine, but not green) about 1/2 bunch cilantro, chopped couple of tablespoons of balsamic vinegar couple of squirts of lemon juice pinch or two kosher salt
Combine, adjust to taste. Best to allow to set for a few hours, and serve cold.
Vegan, delicious, good for you.

Tofu Sloppy Joes
1 medium onion, diced 1 medium green pepper, diced 2-3 cloves garlic, minced
1 lb. tofu, crumbled 3 16 ounce cans of tomato sauce, or diced tomatoes
2 T nutritional yeast flakes 2 T soy sauce or Bragg's amino acids 2 T Dijon or yellow mustard 1 T molasses or sweetener 1 T apple cider vinegar hot sauce to taste
Saute the onion, green pepper & garlic till tender. Add the crumbled tofu. According to taste, you can fry the tofu till browned or go ahead with the rest of the recipe.
Add the 3 cans of tomatoes & all the seasonings. Simmer for 10-15 minutes.
===== We love this stuff. I like to add mushrooms to it too. It's very good served over toast spread with Tofutti Cream Cheese, but also good over brown rice.
