Looking to find vegan goat cheese... |
|
Edited on Tue Jun-14-05 08:11 AM by ehrnst
I have a recipie that calls for chevre. I can't find a commercial vegan version.
Anyone have any ideas for recreating it using veggie cream cheese?
I've tried additions of basalmic vinegar and lemon juice, but it just doesn't come close.

1. Sure. (But you have to make it from scratch!) |

Takes a little effort, but it's not too bad.
6 oz extra-firm silken tofu 1 1/2 tsp agar powder (or 2 1/2 tsp agar flake) 2 Tbsp water 1/2 tsp unbleached sugar 2 Tbsp tahini 1/2 tsp salt 4 tsp lemon juice 2 Tbsp light miso
Blend tofu, agar, water, sugar, tahini, and salt in food processor until very smooth. Place in small, heavy-bottomed saucepan and stir over medium until it bubbles for a few minutes and thickens. Whisk in miso and lemon juice (only after it thickens!)
Roll into balls or logs when almost firm. Store covered in oil in the fridge.
(I think I got this from Bryanna Grogan at VS.)

2. Thanks! This is great. |

I'm really suprised that there is no commercially available product like this.
I would snap up vegan versions of my favorite cheeses like chevre, gorgonzola and the like.
