any good recipes for zuchini or banana bread?

any good recipes for zuchini or banana bread?
Does anybody have a recipe for zuke or banana bread. Or any other kind of easy loaf bread. I've been looking around for some recipes, but most of the zuchini breads have 1 cup of oil, which seems too much to me. Also, I was wondering if buttermilk would be good in banana bread. thanx.

1. Buttermilk works great in banana bread
It seems to give it a really nice texture.

I will look for my zucchini bread recipe, but I think it also calls for 1 c. of oil. It's really good though :-).

ok, well maybe zuke bread needs extra oil to make it moist, whereas banana bread is naturally moist from the banana oil.
That's the only reason I can think of as to why most recipes call for so much oil. Anyway, thanks for the info, and it's also good to know that buttermilk would give a nice texture.

2. Here's one of my mom's old recipes that I love:
It's a recipe for pumpkin bread but I know I've made banana bread using it. Also, this bread freezes well, makes 3 loaves (so the oil is distributed), and is a nice house gift (I make it a lot during the holidays).

3-1/2 cps sifted flour
2 t. baking soda
1-1/2 t. salt
1 t. cinnamon
1 t. nutmeg
1 t. allspice (optional)
3 cps sugar
1 cp. veg. oil
4 eggs
2/3 cp. water
1-1# can pumpkin
1-1/4 cups chopped nuts
1 cup raisins
Blend well. Pour into 3 greased loaf pans. Bake at 350 for 1 hour.

I will enjoy making that. If I were going to make banana bread using this recipe, I assume I'd sub 1Cup bananas for the pumpkin? :)

5. More than a cup, I'd think.
One pound = 16 oz, so I'd go with 2 cups of bananas, the riper the better! Enjoy!

7. A savory zucchini bread
I was hesitant to try this recipe this weekend, because after reading the ingredients, I knew it wouldn't taste like the standard zucchini bread I usually make (with 1 c. of oil). But this was really good. Not a dessert bread, but nice with soup and salad.

3 c. unbleached all purpose flour
1 T. baking powder
1 t. ground ginger
1/2 t. salt
1 egg
3/4 cup packed, light brown sugar
1/4 c. tahini (sesame paste)
1 c. milk (I used soy milk)
1 1/2 c. grated zucchini
sesame seeds

Preheat oven to 350 F. Oil a 9x5" loaf pan.

In a large bowl, mix together the flour, baking powder, ginger and salt.

In another bowl, mix together the egg, brown sugar, tahini, and milk. Stir in the grated zucchini.

Combine the wet ingredients with the flour mixture and stir until blended. Transfer to the loaf pan and sprinkle sesame seeds over the top.

Bake in center oven rack about one hour. Let cool in the pan on a wire rack.

8. really good, tasty zuke bread
LivetoHike,
thanks for posting the zuke bread recipe, I thoroughly enjoyed it. It is more like regular bread, in a way. I made a few mistakes, and it came out a bit doughy on the inside, and with a really thick crust. I think part of the problem was, I used a reg sized square pan instead of a loaf pan. Also I put in some extra grated zuchini, and maybe didn't use exact measurements on some of the other ingredients. Still, it was good, and I love using the tahini instead of oil, love the flavor. I will try the recipe again and might use 3/4 milk and see if that would give a more solid bake to the inside. :)

Mine was a bit doughy inside too, but I never measure. I just kind of eye things up. Maybe I put in too much zucchini :shrug:, but I really liked the bread and will make it again :-).
