DU bread bakers - please post your favorite bread recipes!
I'm especially looking for nice country-loaf style breads but I want to compile a recipe file of all kinds of breads - pitas, naans, loaves, hallahs, bagels, buns, baguettes, tortillas - everything!

I use this all the time.

To use it for pizza dough, after the first rise put it in the fridge and do a slow rise overnight.

on edit - oh, and DON'T use the oven for the first rise, either. let it take its time at room temp.

4. My friend Bob's Cheese Bread recipe...
Wonderful, lush, and works with many variations.

1-1/4 c milk scalded
1-1/4 to 1-1/2 c. grated cheddar cheese (I like extra sharp)
2 Tbs sugar
2tsp salt
--combine so that the cheese melts

1 package active dry yeast
1/2 c warm water
--stir so that the little beasties wake up

4 c. flour
Do the knead and rise thing. It took about 1.5 hours for the dough to double for me here, but a bread maker is warmer than my kitchen probably.

and it's 375 degrees with between 30-45 minutes baking time

In colloquial terms, of course.
