Thanksgiving Cranberries
what do you'll like to do... I wanna go beyond the can ;)

1. Making fresh cranberry sauce is really easy.
- 1 bag fresh cranberries
- 1 cup water
- 1 cup sugar

Heat the water and sugar in a saucepan until it boils. Add the cranberries and boil gently for ten minutes. Let cool to room temperature, then chill in the refrigerator.

There are fancier things you can do, but it's great just like this.

2. 24 Hour Cranberry Salad
This is a must-have at the family Thanksgiving feast.

2 c. fresh cranberries, coarsely chopped
3 c. mini-marshmallows
3/4 c. sugar
2 c. (2 medium) chopped apples
1 c. seedless grapes
1/2 c. chopped walnuts
1 c. whipping cream, whipped

In large bowl, combine cranberries, marshmallows and sugar. Cover and refrigerate 8 hours or overnight. Add apples, grapes and walnuts. Fold in whipped cream. Makes 16 (1/2) cup servings.

3. I don't have
a bag of fresh cranberries here right now, to check the directions, but I follow the basic recipe, using a bit less water, but the same amount of sugar. For instance if it's a cup of each, I'd do a cup of sugar and 2/3 cup of water, which makes them set up a bit more.

Right after I turn them off, I add a tablespoon or so of Grand Marnier, for the orange flavor so many like, without the bitterness. Or, you can use brandy or ameretto or even an extract of some sort (almond, coconut, pineapple are all good).

Since my kids who will be here this year, don't like cranberries, only my husband and I will eat them, so what I'll do, as I do during the year, is use a can of Ocean Spray WHOLE cranberry sauce. I scoop it into a container the night before and add a splash of Grand Marnier. It's quick and gives a really good flavor. Remember when doing it this way, the alcohol doesn't "bubble up", like it does in the just boiled berries, so a little goes a long way. You can always add more if you'd like.

5. Cranberry Orange Relish
1 bag of cranberries
1 thin skinned orange, cut into quarters
1 cup of sugar (more if you like it)

Put the evil big chopping blade in your food processor, add the cranberries and pulse a bit, then put in the quartered orange (pick out the seeds if it is not a seedless orange) and pulse until well chopped.

combine in a bowl with sugar, taste and add more sugar if needed.

Store in Tupperware overnight.

You can use this stuff in all kinds of things: muffins, tarts,
jello molds etc.

Freezes well, too.

7. I just made some of that last night
I remembered my Mom making it and thought it was some unusual family recipe-- wrote to a sister to ask where the recipe was, looked it up in the old family cookbook, and as I was telling my husband about it he said, "Well, did you look on the bag of cranberries?" "Huh?" "It's probably written on the bag."....

I had no idea it was so common, because I've never had it at anybody else's house before! So much for exotic family recipes! :dunce:

8. We added some port wine to ours this year
It made the mundane into the sublime. Quite a sophisticated taste now.

6. The famous NPR recipe -- Mama Stamberg's Cranberry Relish
Works just fine after 2 hours in the freezer.

Mama Stamberg's Cranberry Relish

2 cups whole raw cranberries, washed
1 small onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons horseradish from a jar ("red is a bit milder than white")

Grind the raw berries and onion together. ("I use an old-fashioned meat grinder," says Stamberg. "I'm sure there's a setting on the food processor that will give you a chunky grind -- not a puree.")

Add everything else and mix.

Put in a plastic container and freeze.

Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. ("It should still have some little icy slivers left.")

The relish will be thick, creamy, and shocking pink. ("OK, Pepto Bismol pink. It has a tangy taste that cuts through and perks up the turkey and gravy. It’s also good on next-day turkey sandwiches, and with roast beef.")
Makes 1-1/2 pints.

9. I am happy to pass on the best two cranberry recipies every...
Both are on www.epicurious.com

The first (my favorite) is the cranberry sauce with figs, port, and rosemary. Awesome.

The second is great two....cranberry sauce wiith Gran Marnier. This one is baked, but I didn't have time to finish it in the oven so I finished on the stovetop.

let me know. I have a family recipe for the best ever.

12. A twist on cranberry sauce
I added to my cooked cranberries mango puree and ginger, and sweetened just to taste (used Splenda). It was great! This would be good on a whitefish or alongside jerked meat.
