Amberjack fish
I had this in Mexico, and it was FABULOUS! Very mild, about midway between meaty and flaky; perfect for the grill. I want to try making it here, but don't see it listed on the fish market lists. Is this a hard to get fish? Does it go by other names? What other fish would be similar to it?

1. if you google using "amberjack fish substitutions"
you'll get quite a few hits. Also, if you google "amberjack fish other names" you'll get even more sites. I got a site that said it's also called "Amberfish, AJ, Coronado & Cavilia". Are any of these fish available? Maybe in Texas they call it something other than amberjack.

All say that pompano can be substituted. I have no idea if pompano is available in Texas.

2. I used to catch amberjack on fishing trips of the GA coast...

...but I don't recall ever seeing it in stores. It was a prized catch-- very good on the grill.

3. Yes, it was fantastic grilled!
That's why I want to find it. My best friend's husband loves to grill, so we have dinner parties there a lot, and I want to bring it!:-)

5. Have you tried redfish, Lisa? It's great on the grill;
we've used the blackened redfish seasoning and a cast iron frying pan, which has to be 'really' hot. Also, years ago we used to stuff it with crab meat. Ummm-ummm-good!

7. Central Market occasionally has amberjack. I had it in a hole in the wall
cafe in Matagorda, Texas. It was delicious.
