Alton Brown made me buy a duck.
I was watching his show all about duck on Wednesday night. And I thought, "You know, he's right. Duck is really good."

This has all come about because being alone, I cook one thing and eat it for several days in a row. I've recently burned out on chicken, though the tequila lime turkey breast I had this week was good.

So, when Alton went off exploring duck on Wednesday night, I was very receptive. I haven't cooked duck in a while. I sometimes cook it at Thanksgiving as a nice change from turkey.

But I went to the local gourmet shop last night and lo and behold, they had a roasted 1/2 duck ready to go! :9 Of course I got one. It was rubbed with some kind of herb and pepper flake mixture. But boy is it good! I had the leg and thigh part for lunch today! :9 :9 :9 :9

Just the taste change I've been looking for!

Now, I'm on a duck kick. When I do my grocery shopping tomorrow, I'm gonna get one and cook it myself. I don't care if it's not a holiday.

If you've cooked duck, how do you cook it? I'm open to new ideas.

1. I have never cooked a duck
My mother made it upon occasion. She Cut it half, placed in to a rack, scored the skin real well and put salt and pepper on it. She would baste it with Orange Juice which she said "cut the fat". She would also separate the skin from the flesh with her hand. Some times she would slide orange slices between the skin and the flesh.


The skin was crispy and the Duck was juicy.

The Alton Brown Show made me want to try cooking one too.

2. Alton says we practically ignore duck
in this country. We eat about 1 lb a year. That's in contrast to the 100+ lbs of chicken we eat.

I don't know why. It's really yummy. I've done the a l'orange thing too. I've also put apricots in it.

I might try the Peking glaze. I've never attempted that.

be ready to clean the oven after you roast it.

Honestly, it's easier to buy the roasted ducks at the Chinese market.

I don't recall making a big mess with it.

I saw Alton do a 2-step cooking process. He cut it up in to quarters.

He steamed it first, rendering a lot of the fat.

Put it on the stove top, skin side down. Whne the skin got brown, he stuffed the pan in the oven and let it roast. That seems neater to me. I've never done it that way.

Seems I recently saw a tv show where they prepared part of the duck instead of roasting the whole bird. I remember now. It's this guy http://home.discovery.com/fansites/chefathome/chefathome.html

I thought I'd try some variation of this. I want to fix different cuts for different meals like we do with chicken.

Wow! With all these recipes I can eat duck for the next month! :D

You're right. Duck is no harder to cut up than a chicken. I really need to get some of those kitchen shears. Butcher knives are kinda rough on my small hands.

Not making light of the problem. It's just strange that he'd be allergic to one type of fowl and not another. :shrug:

No frozen fresh duck at the store today. :-(

Am I just too early for that? Is it only around the holidays we get duck in the store?
