Thai dinner tonight, redux!

Thai dinner tonight, redux!
Tonight it's masaman curry (beef, potatoes, onions and green peppers) and jasmine rice.

The Pud Se Ew went well -- the 3-year-old didn't touch it (she ate very little this whole weekend, though), but my SO even ate some cold the next day (and really enjoyed it cold, too!).

And tomorrow...Thai cooking class part 2 (of 2), so more recipes to try!

1. Oh yum!
A dear friend from NYC that I've known for 35 years was up in Boulder for the weekend helping another friend pack for a big move. We all got together yesterday and wound up at a SE Asian restaurant for supper. (I recalled your postings!) I forget the name but the place has been in business in Boulder for almost 30 years. The menu was at least six pages.

We had a pork curry dish that was so good. I'm not fond of Indian curries. But this one was very light in flavor yet savory. Another dish was eggplant with shrimp. And another was shrimp, veggies, peanuts on a bed of crispy noodles. We started with sharing two spring rolls with a peanut sauce. There was a lot left but we made a good dent.

I've got to try making some SE Asian dishes. There are lots of markets in nearby Denver. So ingredients aren't a stumbling block. I'll start with the spring rolls. I'm good at making sticky rice and the ingredients look easy enough to assemble. Mostly, I go to the markets to get sauces or some roast duck and pork or to the bakery for sesame buns. I think it's time to try entrees.

I'm looking forward to reading more about your class!

2. I'm coming to have dinner with you
Masaman is one of my favorite Thai dishes. Also thanks for the curry formula in your last post - I've anxious to try putting in the coconut milk in 2 stages. I also would have never thought to add onions last. I bet your house smells GREAT.

3. UPDATE: Curry was a success!
The potatoes were a little overdone, though, so the curry was a bit starchier than it should have been. But it tasted good, and there are lots o'leftovers.
