Dinner tonight...
Roast chicken over potatoes, carrots and onions...(root vegetables + chicken fat = mmmm). Salad of green beans and cherry tomatoes in balsamic vinegrette.

Perfect for an early-fall cloudy day.

I'm thinking about doing an Apple Pie or a chocolate Zucchini Cake for Dessert. I have some time on my hands this afternoon.

5. Leftovers
Last night my son came over and made crab cakes. They were particularly good. We also had some red beans and rice and a green salad.

The very same is on the menu for tonight.

10. How do you have leftover crab cakes?
Someone has extreme will power!!

I just want something with bread. We haven't had a loaf of bread in the house since we "evacuated". I had a sandwich at the hotel Friday, but since then, I've been so deprived of bread, I should have just gone back on Atkins this week. Well, maybe not, we had stockpiled a lot of cookies and crackers, but the cookie pile has been depleted, by yours truly. Meanwhile, we've been living on steaks. chops and frozen Schwans stuff.

I'm actually going to make a grocery run tonight, bread and PRODUCE!! I've heard there are so many things missing from the groceries, that I figured I'd wait til everything was fully stocked, rather than do hit & miss shopping.

13. Leftover crab cakes .......
We broil them the first time we have them. As tender as they are, the don't get flipped. Just 15 minutes or so under the broiler to get them hot and nicely browned/crusty on top. The next day (I would not suggest keeping them longer than a day) we turn them over and just broil them again. They take about the same amount of time to do as leftovers as they did the first time. The quality is a bit less, but not markedly so.

6. Sloppy Joes and salad
Yesterday, I found a buy and get one free sale on bonelss chuck roasts. I got two and put one through the grinder this afternoon. I'm trying to use up the packages of powdered seasonings packages - I've got such a stash.

...vinegar, with shallots, mushrooms, brussels sprouts, and butter beans. With some Thai chili vinegar sauce drizzled on top. Yum.

It's not fall yet.

Made with ground turkey, lettuce, tomatoes, salsa, guacamole, cheese, crumbled tortilla chips and a dollop of sour cream.
