I'm using up the 15 pounder (no kidding) I dragged in from the garden
I'm doing Zucchini parm and chocolate zucchini cake today.

I'm also making a zucchini/egg white/lemon juice face mask for me and my kidlet.

Any other unusual uses for zucchini. My freezer already has its quota of ratatouille, zucchini bread and zucchini muffins.

with produce like that, then you'll have ham and chops for the year!

I have a picture! I'll post it later when the kid comes back with the camera

I'm usually good about picking them early but this one hid under the foliage and some overgrown tomatoes. Scared the shit out of me when I saw it.

I say it every year in the spring: NO ZUCCHINI! But we love frying up those blossoms that I always think there won't be any of the other stuff left at the end of the season. Once again....I was wrong

4. That brings back fond memories.
My dad used to let them get that big on purpose when we were kids.

We made dolma out of them.

Sooner or later I'll have to post a dolma recipe.

5. Zucchini Relish
I can't find the recipe I got from a neighbor. Here's a recipe I found on the net that sounds similar. The only difference is that I don't use the green pepper - just a sweet red one. We used the food processor to shred the zucc. Zucchini relish is outstanding. I like it much better than pickle relish.

ZUCCHINI RELISH

10 c. zucchini, chopped - about 9 med.
4 c. onions, chopped - about 3 lg.
5 tbsp. salt

Mix the above and let stand overnight - rinse and drain.

1 tbsp. cornstarch
2 tsp. celery seed
1 sweet red pepper, chopped and seeded
1 green pepper, chopped and seeded
5 c. sugar
2 1/2 c. vinegar
1 tbsp. turmeric
1 tsp. black pepper

Add remaining ingredients and simmer 30 minutes.

Pour into hot sterilized jars and seal. Makes about 7 pints. Super on hot dogs - better then sweet relish.
