Flank Steak in the Crock Pot?

Flank Steak in the Crock Pot?
usually I marinate them for several hours and broil, then slice thin but I'm wondering if the slow moist heat of the Crock Pot will tenderize it or will it just make it tougher?

Thoughts?

I don't use the crock pot enough to know what to expect.

1. I don't think I'd waste a beautiful flank steak
It's one of my favorite meals so I always tend to want to stay to the tried and true. I would think it might get very stringy with slow cooking. I wouldn't chance it when it's so quick to cook it on the grill or in the broiler.

2. i just found this recipe at Safeway.com and since I have a ton of
pasta I'm wondering about this one with a flank steak.... I had some top sirloin but that's not what I grabbed this morning LOL.

I guess this one will have to wait

Italian Beef & Pasta

Total Preparation & Cooking Time: 2 1/4 hours

1-1/4 pounds boneless beef chuck steaks, cut 1/2 inch thick
1 tablespoon vegetable oil
1 medium onion, chopped
1 large clove garlic, minced
1 teaspoon dried Italian seasoning
1 can (14-1/2 ounces) Italian-style stewed tomatoes, undrained, broken up
1 can (13-3/4 to 14-1/2 ounces) ready-to-serve beef broth
1/4 cup dry red wine
1/2 pound small mushrooms, halved
4 ounces uncooked mostaccioli (1-1/2 cups)
2 tablespoons grated Parmesan cheese

1. Cut beef steaks into 1-inch pieces. Heat oil in Dutch oven over medium heat until hot. Brown beef, 1/2 at a time; remove. Pour off drippings.
2. . Add onion, garlic and Italian seasoning to Dutch oven; cook and stir 2 minutes. Add beef, tomatoes, broth and wine; bring to a boil. Reduce heat; cover tightly and simmer 1-1/2 hours or until beef is tender.
3. Stir in mushrooms and mostaccioli; continue cooking, covered, 20 minutes. Uncover; continue cooking 10 minutes or until pasta is tender. Stir in cheese.

4 servings.

4. oddly enough....
...the local ad for Safeway here contained a recipe for Italian beef. Oy! The recipe for the marinade had garlic, ginger, soy.....NOTHING Italian! I got a big laugh out of that.
