Flat Iron Steak?
Apparently this "new" cut of beef has been around a while out west, but it's the first time I have seen it in the grocery store, and I have been hearing about it on radio shows.

So, I went online looking for a recipe and picked one that got a rave review on RecipeZaar.com. Marinate in red wine with dry mustard, olive oil, garlic, pepper, salt, parsley, and rosemary.

I guess it's just personal preference, but I hated the combination of flavors of rosemary and red wine! The meat itself was pretty good! Quite tender in fact. So, I scraped off the rosemary and put on some A1 New York Steakhouse sauce, and it was MUCH better!

So, bad recipe, but I'm pleased withthe new cut of beef. I think it would make nice, tender fajitas as well, and it is just thick enough to slice up real nice for that.

1. I'm with you on rosemary,
except I have a lamb chop marinade that uses it, and it's sensational.

We've been enjoying flat iron steaks for a few years now, and they're terrific just plain. I'd never think to marinate them, but I never do anything to Omaha Steaks meats - http://tinyurl.com/bvrg9 - they're that good.

It makes great steak hoagies, but all the seasonings go on while assembling the hoagie. And it's also nice for breakfast.

3. I usually like steaks pretty plain.
I prefer the natural flavor, but only tried this because what I read said it needed to be marinated. I'm glad to know that's not the case! I really liked the texture of the meat! I think I'll use it next time I make fajitas!

2. Here's a good steak marinade
Juice of an orange, your favorite hot sauce about three tablespoons, your favorite mustard about two tablespoons, granulated garlic about 1/2 teaspoon, 1/4 cup of soy sauce...marinade for at least 2 hours, but as long as you can is good and overnight is even better.

This can be used on the flat iron or on london broil, or even tri tips.

If I cook a tri tip, I wrap it in aluminum foil and place it on a hot grill...10-12 minutes each side...then carefully remove from foil and SAVE THE JUICE..it has been steaming on the grill.

place unwrapped tri tip back on the grill...5 minutes each side

you will have a medium to medim rare tri tip and a great sauce!
