Italian Sausage and sauce on the grill....very yummy! Try it! |

I take:
4 to 6 sausages and grill them until they are quite charred.
One whole sliced onion ..large and any color....brush it with olive oil and grill until charred.
I wrap the following in aluminum foil:
4 large chopped tomatoes two cups sliced mushrooms 1/4 cup FRESH oregano 1/2 cup FRESH basil drizzle olive oil add salt and pepper
leave the foil packet on the grill all the while the other things are cooking...let it cook a good 20 to 30 minutes turning occasionally.
Then in a large serving pan, pour the sauce from the packet...chopped the onion and add it and place the sausage on top
You can also grill, char then peel a red or green bell pepper into this
Serve over pasta OR serve in a french or sourdough roll as a sandwich
Yummy and no stove to clean or pans to wash

I think the smokey sweet flavor of charred and peeled peppers would absolutely make that sauce. You might try adding a little balsamic vinegar to the sauce, too-- I use it in virtually any tomato based sauce.
