poor little ol me :silly:
I recently switched to vegetarianism and so my usual laziness about cooking just won't do. But it kills me to waste and I'm clueless about saving stuff.
E.G. Sunday I made stuffed green peppers (riced and black beans). Put one in the fridge and was going to lunch on it today. Hmmmm, don't think so.
I've still got some stuffing and fresh peppers...
Should I just freeze most stuff? How long do beans last?
Any other suggestions?

Toss them with some oil and vinegar, throw in some chopped sweet onions or scallions, maybe some plumped raisins, any nuts you might have around, chopped carrots, red cabbage, cucumbers, corn.
Take the peppers and chop them up and throw them in, too.
Toss it all, and you've got a nice rice salad.
Now I'm hungry..............

Make a bunch of pesto and freeze in individual servings. In the morning, pull one serving out and leave it on the counter. When you get home, cook up some pasta.

I have the same situation as you indigo32.
What I do is I still buy stuff like say at Costco, but when I get home I divide it into individual portions already. I keep out what I will eat immediately (or use for lunch for the next several days) then I freeze the rest.
Beans will freeze pretty well as long as it's an airtight seal, otherwise you get freezer burn if you leave them in there for long. Fresh peppers I haven't found do to well. They just get mushy. I don't know how roasted peppers do.
Any kind of casserole freezes pretty well. Again, use the individual portions. Even if you invite someone over, you can just get out several containers. I find it less daunting to use the stuff I've frozen if I do it in small batches.
