Spur of the moment company coming! Help

We were suppose to go out but... I'm making grilled chorizo, fresh mozzarella with tomatoes and pesto sauce. Linguine with shrimp, scallops, green and red peppers, and broccoli with olive oil and garlic sauce. (colorful and yummy).

For desert I'd like to make flan. Never made it before :scared: need a recipe for 8. I have the ramekins and a butane torch which I don't know how to use, lol. Anyone have an easy fool proof recipe for the flan and the carmelized sauce? I've eaten this at many a Spanish and Portuguese restaurants but never tried making it.

Feel free to add suggestions to the menu ;) Love you guys, big time. :hug:

We all made pigs of ourselves. I just caught my husband eating the last slice of mozzarella and tomato :rofl:

Sent a goodie bag to my niece who had other plans but loves the soup and linguine with shrimp. She loves me for life ;)

experimenting today......Just do something with fruit and ice cream or just some sherbet. Your menu is great.....

but, I'm a gluton for punishment. I have the fruit and ice cream back-up. If the flan works out they can choose or have both :rofl:

7. the first rule of entertaining
If a dish fails, just call it something else. Less than done pumpkin bundt cake becomes pumpkin pudding cake. That's how it's done.

I always try to carry on as if that is what I meant to happen & anyone who thinks it is wrong is not much of a gourmet & really knows nothing about food :rofl:

I've done all the prep, made a pot of Portuguese soup, which will taste even better tomorrow. And I made the flan!! I made 10 and as soon as it's cool enough I'm going to taste one :evilgrin:

I love your nick - I've been saying it since 2000.

13. Taaaaaaaaaaaaa Daaaaaaaaaaaaaaa!!!
I just have to share. Dinner was a smashing success! Everything from appetizers to desert (flan). Thanks so much for the support and the super easy flan recipe. Everyone raved about it. Now that's not since these folks aren't gringos. My family is Portuguese, Columbian and Cuban and Italian so these people aren't easily impressed.

We started off with app y's of grilled chorizo, fresh mozzarella with tomatoes and a basil pesto sauce. Then the Portuguese Caldo Verde, which is a soup of kale or collard greens with potatoes, bits of chorizo, and onion. The main course was the shrimp and scallops with red and green peppers and broccoli in a butter/Olive oil/garlic sauce. Then desert of flan, and a pecan coffee cake ring and sesame cookies my sister-in-law brought. My hubby made pitchers of white sangria. Wow, I'm stuffed! But, the best part is that everything was prepped and ready to go after some cheese and crackers and chit chat. I was so relaxed and able to enjoy my company.

You guys were in my heart and in our conversation this evening. One brother is law is a repub although he doesn't vote, thank God! The rest of us are liberal Dem's and with so much information learned from DU my hubby was having a ball knocking down every republican talking point his brother brought up. I don't know what to make of my bil, I think he's socially liberal and fiscally conservative but, these neocon are neither. My husband has two brothers, one is this pseudo-repug the other is liberal and gay and my sister in law the repugs wife has two gay sisters. He loves and respects them but, he's still a repug and a fan of Reagan, Nixon and Bush. :shrug:

Anyway, thanks again for the spectacular flan recipe. It was the easiest of all that I found and rates 5 *****. :grouphug:
