grilling veggies, help please?

grilling veggies, help please?
the steamer is busy cooking rice, so I have some zucchinis and a couple yellow crooknecks that I'd like to grill up to go with the tarragon rice and Italian Sausage for dinner

just brush em with EVOO and go for it? or is there a trick I should know?

1. You got it right .... EVOO .... and add a little salt
Put the cut veggies in a bowl. Pour on some olive oil and some salt. Mix 'em up by hand till they're all coated and slick. Grill 'em up!

2. I sliced them longways, then used my brush and brushed the EVOO
on and salted and peppered them

they were yummy! (ok so I went a little heavy on the pepper, but they were still good heheheheh)

that was so easy, i'll definitely add that to the "do that again" file (now that it's cool enough not to twitch when I turn the oven on again)

During the summer, that's how I eat most of my veggies. Peppers (red and yellow and orange), zucchini, asparagus, broccoli (cut into 1/2" or so planes parellel to the stem axis), corn on the cob, leeks, scallions, half and whole onions, mushrooms, avocados, and on and on and on...

either slice them up and coat with olive oil and sea salt, or sometimes chunk 'em up and shishkebab 'em.

Corn I generally take all the leaves and shit off, and grill 'em right on the rack, since I'm usually in a bit of a hurry and don't have time to soak the SOBs. BUt I love, when I have the time, to soak them for hours in water, then grill them, husk and all, on the grill.

Shishkebabs are an especially easy way to grill, since if it's all about the same size, it all cooks in about the same time, meat and veggies both.

5. Yep - cut in half, take out the pit, and put edible side down
on the grill.

Yum yum!

Makes a nice smoky guacamole, especially wonderful if you do a flank or skirt steak on the grill for fajitas.

6. I grill mine in my G.Forman grill
they grill up nice. then I serve veggies over a dried tomato polenta. drizzle with olive oil and fresh grated perm or romano cheese. I slice up zuchina, red peppers, onions, eggplant, summer squash, , place them in a plastic bag , chopp up garlic, drizzle EVO, COAT IT WELL, AND GRILL.
