We're doing Halloween at work tomorrow (actually on Halloween -- go figure), including "trick-or-treating" and (yet another @#!%$#%$) potluck.
For trick-or-treating, I made s'mores fudge, adapted from a cookingforengineers.com recipe:
1 14-oz can sweetened condensed milk
5 tbsp butter
1 shot Frangelico (optional)
Heat until butter is melted. Remove from heat.
Stir in:
12 ounces semi-sweet chocolate chips
4 ounces white chocolate chips (Or use 1# of whatever you have on hand)
...until everything's melted and smooth.
Then stir in the equivalent 3 or 4 coarsely broken graham crackers, and finally 1-1.5 cups mini marshmallows, depending on just how marshmallowy you want it. The mixture should be cool enough not to melt the marshmallows at this point.
Pour into an 8-inch square baking pan lined with wax paper, parchment or plastic wrap, and chill until firm. Cut into 1-inch squares.
Makes 64 bite-sized pieces if you actually get the fudge evenly distributed in the pan, but it realistically makes 49 for me.
For the potluck, I made Bread of the Dead (yeah, I know Dia De Los Muertos is Nov. 2, not Halloween, but it works).
