With some qualifications. It will still melt fine, but be aware that it might dehydrate some after freezing.
If it's something you would normally use on pizza or casseroles, it shouldn't matter too much.
I wouldn't defrost it before using, just break it up enough to sprinkle. That way the water crystals won't be lost.
Cheddar, on the other hand, freezes not at all well, so try to avoid freezing it.
