Your favorite leftover turkey recipe |

I have some leftover turkey breast, and have had enough turkey and stuffing sandwiches this weekend. I usually make turkey soup, but I don't have the bones or dark meat.
I would love any suggestions-I'm always willing to try new recipes!

Mix mole powder and chicken broth under a low flame until it is soupy. Add the turkey. Simmer. Enjoy.

1. Butter two slices of bread 2. On one slice of bread layer on leftover turkey 3. Add layer of cranberry sauce 4. Put other slice of bread on top 5. Eat
Ok, just kidding, but that is my favorite use for leftover turkey!

I add some cream cheese to mine, though. I finished off our leftover turkey today! Yum.

I made a huge pot of turkey chile with my leftovers, and it was yummy, and it didn't taste like T-giving dinner all over again. You can add all these ingredients to taste.
Cut up your turkey meat (works with dark and/or white meat) into half-inch chunks.
Sautee some diced onions (1-2), garlic (4-6 cloves) and jalapenos (1-2) in olive oil until softened. Add chicken or turkey broth (about 6-8 cups), canned diced tomatoes (28 oz), tomato paste or crushed tomatoes, then stir in oregano, cumin and chile powder to taste (I use 1/4 cup chile powder for a very spicy chile). Boil then reduce to simmer with the turkey meat about an hour. Then add whatever canned beans you like (I use kidney beans, black beans and/or garbanzos). Simmer another 30 minutes. Salt & pepper to taste.
Top with sour cream and shredded cheese, serve with avocado slices and tortillas.
