Anyone got a raw or cooked Cauliflower soup recipe????? |

I have this head of caulifower (about 1.5 pounds) which I bought on sale cheap ($.48) and would like to turn into soup.
All suggestions would be welcomed, and THANKS in advance.

Pare the cauliflower and cut into pieces. Melt a bunch of butter in a pot. Toss the cauliflower in butter and heat. Barely cover the whole mess with chicken broth. Cook until cauliflower is tender. Mash or not as you wish. The cauliflower will disintegrate, anyway. Add "enough" milk and salt and pepper to taste.
I've also added grated Cheddar at the end. You might want to add a chopped onion in the original phase and add it to the raw cauliflower. Some peeled and cubed potato might add body, too. Personally, I don't think it requires much in the way of herbs.

but carmalized some yellow onion in the butter...along the way I added a little red pepper and cardomon because that suits my tastes... and then I did puree the whole kit-n'- cabootle.
Thanks for your help. The soup was great!
I am thinking a garnish of very thinly sliced roasted red pepper or maybe wilted "spring mix" would make that suitable for impressing the "right" people.

which uses 2 shallots, garlic and an onion in the first phase. Saute it in olive oil. Then add the chicken broth and cauliflower and let it cook. Puree and then add cream, a dash of salt and some white pepper. You can garnish with asparagus tips if you want to fancy it up. Yummy!
