Whipped Cream & Mandarin Oranges?

Whipped Cream & Mandarin Oranges?
My son's first birthday is approaching, and I want to make him a cake.

I was thinking of making a rolled cake, just a citrus flavored sponge with a whipped cream filling with drained mandarin orange pieces. But now I'm wondering if it's okay to mix citrus with whipped cream. Would this work, or would it turn into an icky curdled stomach-turner?

PEA PICKIN' CAKE (presumably titled because it's so quick & easy to make that you still have time to go outside and pick peas in your garden when you're finished)

1 can mandarin oranges
1 pkg. Duncan hines butter cake mix
4 eggs
1/2 c. oil

Cook according to directions on box of cake mix.

TOPPING:

1 lg. can crushed pineapple
1 lg. box instant vanilla pudding mix
1 lg. tub Cool Whip

Mix together and spread on cake. I usually bake in three 8" pie pans so I have 3 layers. Keep refrigerated. Delicious.

I know Cool Whip (which I normally hate, but WILL eat in this recipe) doesn't curdle with the citrus addition, but I'm not sure about real whipped cream.

2. Well, fwiw, my MIL makes some kind of refrigerator pie
that has those 2 ingredients. Turns out fine. :9

3. i'd use cool whip, I make cremosa Italian Sodas at work and the
1/2 & 1/2 will curdle if added to straight Orange or Lime Torani syrup. Even Strawberry curdles it sometimes if I don't hold my head just right :)

4. Our local bakery makes a citrus tart and they use real cream and
mandarin oranges. They also put strawberries and sliced kiwis on it.

And yes, it is real cream .... not whipped ersatz.

5. There's something called 'ambrosia' that mixes whipped
cream and mandarin oranges; Mom used to make it. It was okay (though I think there was coconut in there, which I didn't care for).

I will try it! I think it would be a good idea for me to do a "test run" on the cake, though, especially before all our families arrive in town.

Oh, and thank you for the alternative suggestions - I always love seeing what ideas other DUers have.
